Peanut Butter Strawberry Oatmeal

.Let me start off by letting you know that my my top 2 favorite things in this world are nut butters and strawberries. With that being said, let me also let you know that both of those things are super tricky to come by for a decent price (or at all) in your average Japanese grocery store. The fact that I was even able to create this kind of recipe out here is a blessing in itself, but I am super excited to share it with everyone!

Disclaimer: this is my first post regarding my food creations and I am definitely not a chef by any means. I'm just a girl trying her best to live a healthy & balanced lifestyle... and who also happens to really LOVE FOOD.

I hope you enjoy this little recipe! It's super easy to make.

The ingredients I have at my disposal lol

Ingredients 

  • 1/2 cup of Rolled Oats
  • 1/2 - 1 cup of Almond Milk (or any liquid of your liking)
    • adjust amount to your liking
  • Maple Syrup or Honey
    • adjust to taste
  • 3 medium strawberries 
  • 2 TBSP of Peanut Butter
  • 1/4 tsp of Cinnamon
  •  Splash of Vanilla

Optional
  • 1/2 TSP of Chia seeds
  • Shredded Coconut
  • 1/4 TSP of Coconut Oil for extra Coconut taste
  • Chopped Nuts
  • Additional Nut Butter on top (I used Wild Friend's Almond Butter)

Instructions

  1. Mix together the following ingredients together in a microwave-safe bowl
    1. Oats
    2. Milk
    3. Sweetener
    4. Peanut Butter
    5. Cinnamon 
    6. Vanilla
    7. Coconut Oil (optional)
  2. ​Pop it in the microwave for 1:30-2 minutes 
    1. If I have more time in the morning, I also like to make my oatmeal in a pan on stove-top.
  3. Mix again & add any additional milk to adjust consistency
  4. Sprinkle the following OPTIONAL ingredients on top
    1. Coconut
    2. Nuts
    3. Chia Seeds
    4. Anything your heart desires
  5. ADD YO FRESH STRAWBERRIES
  6. Plop on a glob of Wild Friends Nut Butter if you're feelin' up for it!
  7. Mix it all together & ENJOY!

My son loves peanut butter. He thinks it tastes good on anything. I didn't expect he will really like this because I thought peanut butter and strawberries will not be a good match but I am surprised it went well. I just followed the instructions carefully and it went well. It was a pleasant surprise for me. I am going to learn how to make more desserts like this so our afternoons will always be better by the day. One day he is going to ask his future wife to do this for him so for now, I am going to enjoy taking care of him while he is young.
